This series of courses aims to empower individuals with the tools and confidence to redefine healthful cooking while pursuing deliciousness! Classes will be held at Red Butte Garden and will enjoy a meal after the cooking demonstration.

Summer Appetizer Session

TUESDAY, June 8

7-8 PM

For our first In Person Cooking Demonstration, June's theme is Mediterranean tomato tapas served as summer crowd pleasers to family and friends at gatherings and barbeques. This class will be lead by Chef and Dietitian Kary Woodruff! Tomatoes are a staple during the summer and often result in excess in your summer garden. They are also a staple in the Mediterranean diet, the recommended diet for reducing the risk of heart attacks and strokes. Each dish will also feature extra virgin olive oil, another staple of the Mediterranean diet. EVOO is high in monounsaturated fat, which, when substituted for saturated fat, may help reduce ‘bad’ LDL cholesterol. Like tomatoes, EVOO is also high in antioxidants and anti-inflammatory properties.

Recipes include: Caprese Skewers; Greek Salad in Red Cabbage Cups; Italian Bruscetta Toasts

Fireside Cooking

TUESDAY, July 13

7-8 PM

Join Jenn Macali, Assistant Professor in the College of Nursing and avid backcountry chef, for this fireside cooking class in the Herb Garden! This class will explore plant forward meals that will satistfy the hungriest of campers. Just because you're not in your kitchen doesn't mean that you need to sacrifice flavor and health. This cooking class will discuss delicious meal options that can be packed into the backcountry or prepared at your favorite campground; they are so tasty they may even make it into your weeknight meal rotation.

Recipes include: Perfect Backcountry Charcuterie Board, Hearty Campfire Stew, Stone Fruit Cobbler
